Wahoo Fish Cakes
1lb fish
2 med potatoes.
1 large onion.
4 tabs sweet Chilli,
2 tablespoons chopped parsley
1 1/2 tab coriander paste,
1tab lemon grass paste,
1tab fish sauce,
1/2 tsp salt
1 egg, beaten.
Method:
Boil potatoes in salted water until cooked, then drain and mash finely. Wash fish and shred or mince with a fork until very fine. The finer you shred the fish and mash the potatoes, the fluffier the results. Heat oil and fry onion, until soft. Add parsley, chilli, coriander, lemongrass and fish sauce, fry until onion starts to brown. Remove from heat and combine with the mashed potato. Add the fish, salt and beaten egg. Mix together well, shape 1/2 " thick & 2" diameter. Flour & fry for around 1 1/2 mins each side
Serve with sweet chilli sauce
