Kale Salad

(Shared with me by Lyn in Georgetown, Bahamas)

Wisk: 
Juice of 2 lemons   
1 shallot chopped
2 tsp honey
1 tsp salt  
1/2 tsp red pepper flakes    (I believe you refer to these as capsicum)  

Add to 2 bunches of Kale chopped, stems removed
Toss & let sit at least 20 minutes

Mix in 2 Tbl olive oil, Refrigerate upto 1 day

Add in: cooled sauteed sliced almonds
8 dates chopped   (I always use more)
Parmesan cheese shaved to taste
Serve chilled
